Can you have a 4th of July picnic without a potato salad? Not in my house! We got together at my sister Andrea's house for the annual family bbq/fireworks show. It's getting pretty big now. We had 28 there and we are missing several family members (Florida). Tons of kids, which = tons of noise; sticky hands, crying, laughing, and running around. They had a blast with their cousins and watching the fireworks. And the adults.....visit, eat, repeat. Good times! Hope you had a wonderful holiday weekend too.
It's not my mom's potato salad. It doesn't even come close. But, in her absence, it was a pretty good facsimile.
POTATO SALAD
5 lbs red or gold potatoes
1 dozen eggs
1 small sweet vadalia onion, chopped
4 stalks celery, chopped
dressing:
2 cups real mayo
2 T. vinegar
1/2 cup dill pickle relish
1/2 t. celery seeds
1/2 t. white pepper
1 t. dried ground mustard
1 t. garlic powder
1/2 t. poultry seasoning
1 T. dill (or 1/4 c. fresh dill)
1 t. salt
1 T. Old Bay seasoning
*Boil potatoes. Drain and cut into bite size pieces.
Boil eggs. Cool, peel, and chop into bite size pieces.
Chop veggies and mix dressing.
Toss all ingredients together. Refrigerate for several hours or overnight before serving.
